Spiced Pear & Sultana Muffins

These sweet, filling healthy muffins are perfect for a breakfast bite or just a light snack in the afternoon!

Here is our tried and tested recipe (they are truly scrumptious)!

For the dry mixture:

100g self raising flour
1 tsp mixed spice
2 tsp ground cinnamon
30g oats
1tsp baking powder
50g caster sugar
2 pears
25g sultanas

For the wet mixture:

1 egg
5 tbl milk
50g melted butter

Makes 12
Bake 20 mins @ 180c  (fan oven)

Sift the flour into a bowl, add the spices and mix together. Stir in the sugar, oats and baking powder. Add your diced pears and sultanas & mix together. You should now have a bowl of dry mixture.

Hand whisk your single egg in a bowl, add 5 table spoons of milk as you go. Melt 50g of butter in a small bowl and add this to the wet mixture.

Pour wet mix over your dry mix and fold together. The key to a light muffin mixture is to mix them together with only a few folds to keep as much air in the mixture as possible. Using a large metal spoon helps - don't worry if the mixture hasn't fully blended together!

Pour mixture into 12 muffin cases (If you have silicon muffin cases these work best as they peel away easily and leave you with a free standing muffin - normal muffin cases are fine as well).

Bake for 20 mins @ 180C

Very quick and easy recipe to follow - try mixing & matching your ingridients - cranberry's/blueberry's/apple/almonds/walnuts etc!

You can also make these muffins gluten free by substituting the flour for ground almonds or rice flour.

You can find a picture of our home-made muffins on our Facebook page :)

We hope you enjoy these tasty treats!
